This Chinese Plum Chicken recipe is not only mouth-wateringly delicious, but you will also find it quite simple to make once all the ingredients are measured out. Plums are a great fruit, rich in vitamin C and antioxidants, and in a sauce paired with chicken or duck, they create such a delightful combination with a sweet and sour type of taste brought out by the
apple cider vinegar (another great ingredient with a large number of health benefits.) Chinese Plum Chicken goes well with rice and feeds a family of 4. Or if you want to make this in summer, it also pairs well with a fresh green salad.
Ingredients
- 8 chicken drumsticks (skinless)
Chicken marinade:
- 1 tbsp cooking wine
- 1 tsp salt
- 1 tsp sesame oil
- 1 tsp garlic powder or mashed garlic
- 1/2 tsp cayenne pepper
Sauce:
- 1 tbsp apple cider vinegar
- 1 cup plum puree
- 1 tsp salt
- 1 tbsp brown sugar
- 1/4 tsp cornstarch
- 1/2 tsp cayenne pepper
Directions
1. Mix together the ingredients for the chicken marinade. Cut a few slits on the chicken and marinate for about 1 hour (longer if possible).
2. Grill or pan fry the chicken till cooked. Put on a plate and set aside.
3. Blend plums into a puree. Place in saucepan and mix in all ingredients for the sauce. Cook till slightly thickened.
4. Pour sauce over chicken. Ready to serve!
