Chinese Plum Chicken

Prepare time: 1 hour 10 mins
Cook: 30 mins
Ready in: 1 hr 40 mins
This Chinese Plum Chicken recipe is not only mouth-wateringly delicious, but you will also find it quite simple to make once all the ingredients are measured out. Plums are a great fruit, rich in vitamin C and antioxidants, and in a sauce paired with chicken or duck, they create such a delightful combination with a sweet and sour type of taste brought out by the apple cider vinegar (another great ingredient with a large number of health benefits.) Chinese Plum Chicken goes well with rice and feeds a family of 4. Or if you want to make this in summer, it also pairs well with a fresh green salad.

  • 8 chicken drumsticks (skinless)

Chicken marinade:

  • 1 tbsp cooking wine
  • 1 tsp salt
  • 1 tsp sesame oil
  • 1 tsp garlic powder or mashed garlic
  • 1/2 tsp cayenne pepper

  • 1 tbsp apple cider vinegar
  • 1 cup plum puree
  • 1 tsp salt
  • 1 tbsp brown sugar
  • 1/4 tsp cornstarch
  • 1/2 tsp cayenne pepper

Mix together ingredients for the chicken marinade. Cut a few slits on chicken and marinate for about 1 hour (longer if possible).

Grill or pan fry chicken till cooked. Put on a plate and set aside.

Blend plums into a puree. Place in saucepan and mix in all ingredients for the sauce. Cook till slightly thickened.

Pour sauce over chicken. Ready to serve!
