Fried Bean Sprouts (with prawns) is a fresh, light, and delicious tasting meal I like to eat in summer. Bean sprouts are one of those ingredients where it is just so simple to grow your own and they can be added to a variety of dishes to give a burst of juicy, nutty, crunchy goodness. This Fried Bean Sprouts recipe is so simple to make and takes no time at all.

  • 2 spring onions (cut into long pieces)
  • 1 small carrot (shredded)
  • 4 dried mushrooms (soaked in water to rehydrate, then shredded)
  • 4 small cloves of garlic (smashed and chopped)
  • 8 prawns (keep the tails)

  • 1 1/2 tsp salt
  • 1 tbsp cooking wine

1. Wash bean sprouts and leave them out to dry.
