-
1 large onion, finely chopped
-
2 tbsp of fresh finely cut herbs (I use a blend of thyme, rosemary, and parsley)
-
1 1/2 cups walnuts, chopped
-
1/2 cup of blanched almonds
-
1 1/2 cups of rolled oats
-
1 tbsp of nutritional yeast flakes (Macro is the brand I use)
-
1 tbsp of textured vegetable protein
-
16 ounces of finely chopped white mushrooms (400 gm)
-
1/2 cup water
-
2 tsp of soy sauce or Tamari
-
3 sheets of Borg’s Puff Pastry (Borg’s brand at Woolworths is totally Vegan)
Directions
1
First, mix all the dry ingredients together in a bowl along with adding the fetta cheese by crumbling it in with your fingers.
2
Next, mix the liquids together and pour over the dry ingredients in the bowl.
3
Take a sheet of pastry and cut down the middle. Spoon the mixture evenly down the center of each portion, where the broken lines are in the illustration below.

4
Roll the pastry over the mixture so it is wrapped inside, forming two logs. Sprinkle sesame seeds over the top, then cut each of the logs into six pieces, making a total of 12 vegan sausage rolls. Poke a fork into each piece to allow steam to vent.
5
Bake at 350°F (180°C) for 20-25minutes or until brown. After they are baked, place them on a plate and serve with tomato or chili sauce, or they are good on their own, too. Jan’s Vegan Sausage Rolls can be put into a sealed plastic bag or container to freeze.
