Spicy Tofu with Ground Beef is a comforting dish, great for a cool night in. It is a family favorite in our house, and each mouthful is an explosion of flavor. Tofu is rich in protein and contains all nine essential amino acids. It is a good source of iron, calcium, and the minerals magnesium, copper, zinc, and vitamin B1. And I love any excuse to cook with my homemade Fragrant Chili Oil.

Ingredients

  • 1 pound ground beef (400 gm), you may use chicken or pork instead of beef if you like
  • 28 ounces firm tofu (800 gm)
  • 1 leek, cut into pieces
  • 1 onion, cut into pieces
  • 1/2 cup coriander
  • 4 tbsp chili bean paste
  • 1 tbsp black bean paste
  • 2 tbsp oil
  • 2 tbsp fragrant chili oil (refer to Fragrant Chili Oil recipe above)
  • 1 tbsp cooking wine
  • 1 1/2 tbsp cornstarch mixed with 3 tbsp of water

Directions

Prepare spicy tofu:

1. Cut tofu into cubes.

2. Boil 4 cups of water, add 1 tsp of salt.

3. Add tofu into boiling water and boil for 5 minutes. Remove and put aside (this softens tofu and also gets rid of the soybean smell).

Method:

1. Saute onion in oil till light brown. Then add in fragrant chili oil (2 tbsp).

2. Add in meat and fry till half cooked. Stir in chili bean paste, black bean paste, and leek.

3. Add in tofu, use a wooden spatula to gently mix it with meat (take care not to break up the tofu).

4. Sprinkle in cooking wine and coriander.

5. Add in the cornstarch-water mixture. Cook till slightly thickened.

6. Ready to serve your Spicy Tofu with Ground Beef.
